Is there a way you can check if your olive oil is a high quality one? Are there rules like in wine?

Olive oil is tested in labs by experienced oil tasters who give the oil it's quality certificate. Unless you are very experienced with oil, and able to test it before buying, I'm afraid you'll have to look for oils with such certificate.
