Keep service singular not plural. And in your question you asked "I wanna." Your writing would improve if you spelled the word out instead of putting it in slang: I want.

Most style guides say that "sir" would not be capitalized in this instance. It would be "Which television service are you using, sir?"

Trust me. I have a degree in English from a Jesuit College. I am a writer and read voraciously. If I were to say, "What aisle are you looking for, Miss?" I would capitalize "Miss." You never hear of sir Paul McCartney or sir Laurence Olivier. You capitalize "Sir."
