Some go better with different ingredients and some just taste better, basically if you compare the regular vinegar with wine, balsamic or even rose and garlic, the “special” ones have much more flavor.

In Balsamic (which is a vinegar made of white grapes) you may find vinegars with high “prestige” that is they are expensive grapes who were aged for years!

I my self love balsamic and apple cider vinegars - you must try something else from time to time, you just may find some think you would like!
