If your man is allergic to latex he will most likely get a rash on his ****. He may also have blistering and redness in that area. It probably will be very itchy as well. Mostly it will be uncomfortable (and he will probably be a bit embarrassed). There are other types of condoms out there, like lambskin. Good luck!
