to me the best way is to hold and talk to the quaker. holding the bird is the best thing to do, it relaxes the bird and yeah she/he will try to bit you, you need to get a pair of gloves while you are holding the bird I have a quaker also but mine is called a lazy quaker she will not talk at all. just a lot of noice. always talk to the bird I was told that if the bird don't talk it is a girl I don't know how true this is but I think mine is a girl. the only way I was told of how to tell by the sex is getting blood work done.

but for the training keep talking to the bird every chance you get. take the bird in and make sure the wings are clipped that way the bird can not fly away from you. talk and hold are the two main things to do and make sure there is no dogs, cats, around. they also like the back of their necks petted, rubbed so that will also help to relax the bird. I had mine since it was a baby also. good luck.
