How important are sitemaps? Don't the Search engines just spider everything anyway?

Google's explanation of sitemaps indicates that, under various circumstances, a sitemap can help a spider to find more of a website's content.  I suppose that well-established sites with simple structure and plain HTML content might not benefit much, while a new site with complex structure and dynamic content might benefit a lot.
