My cooked rizzoto was soft and grains did not separate. I followed the recipe withpouring 1/2 cup of simmering broth at a time using the 5 cup instructions. What did I do wrong? Thanks
I'm not sure you did anything wrong. Risotto is not like plain white rice in consistency but more along the lines of oatmeal. Adding the broth slowly and constanly stirring helps to round off the grains of rice, breaking off small bits of starch, thickening the dish and making it very creamy without having to add milk or butter.
How To Make Basic Risotto
You may have added too much liquid to your risotto. The grains of rice should still have some "bite" and not be soggy. Hope this helped.
