Dear Alex: I have a Nuwave Pro Infrared Oven and it came with an extender ring kit which lets me cook a 16lb turkey, which is great for my family of 6. Additionally, I have cooked a 10 lb turkey with out the added ring and again it is great for my family of 6. I have not had the problem with browing or crisping that you describe. I set the power on high and use the 4" rack and I get the great browning and crisping that I have come to expect with this oven. I have tried this with Chicken, Turkey, Ribs, Lamb, Steak, Pork,Brats, and Hamburgers. Were you cooking with the appropriate temperature and with the right rack heigth?
