what does it mean (psychologically) when someone collects mirrors?

Psychologically, it means they really like mirrors.  Symbolically, it could mean they they really like looking at themselves, they may be a bit vain, or they are a "reflective" type person.

Is his collection of mirror interfering with his possibillites of living a fulfilling life? If not, it does not mean anything than that he likes collecting things, and has chosen mirrors as his object.
