SPIKED OLIVES

1 and 1/2 cups mixed good-quality olives, drained if necessary

3 Tablespoons extra-virgin olive oil

1 clove garlic, minced or pressed

1/2 teaspoon red pepper flakes

1 lemon

Freshly ground pepper

Mix the olives, oil, garlic and red pepper flakes in a container with a (tight fitting) lid.

Remove the zest from the lemon with a zesting tool so it is in very fine strips. (If you don't have a zesting tool, grate the lemon zest.)

Mix in the zest and several grindings of pepper and let the olives stand, covered, at room temperature for at least 2 hours to settle the flavors.

You can also cover and refrigerate for up to 3 days; let olives come to room temperature before serving.

This recipe is from 'Party Appetizers. Small Bites, Big Flavors' by Tori Ritchie. There are quite a few good recipes to choose from; I recommend you pick up a copy if you find it available.

You can also check community cooking web sites such as www.allrecipes.com or www.Recipezaar.com (I prefer Recipezaar, myself) for suggestions.

Happy cooking!

Whip cream cheese with chopped chives, olives, pimentos and green olives.

Spread on soft flour tortillas.  Roll up and slice at one inch intervals.

You can vary the flavors according to what you add to the cream cheese.  Some ideas are Jalapenos, cheddar cheese, bleu cheese, dill, curry, chopped pepperoni, kalamata olives, even make sweet ones by adding sugar, a dash of vanilla and fresh chopped strawberries, or jam or marmalade.
