A "paddle" is one type of blade that comes with a stand mixer.
You do not have to use a stand mixer with paddle when you make cookies. It is perfectly acceptable to use a hand-held mixer.
In fact, it is perfectly acceptable to use no mixer at all - just a spoon and some elbow grease!
