The Israeli Origami Center is a good place to start. They also have periodical meetings where Israeli paperfolders meet and share their experiences and teach each other folds and tricks: http://www.origami.co.il/

Another site, which i recommend warmly, is Ravi Apte's site: http://www.raviapte.com/gallery/OrigamiModels . I personally folded the Fujimoto Hydrangea and the Kawahata Elephant. They are not for beginners, but are not too difficult either, and they are instructed marvelously.

You are also welcome to check out my own website: www.geocities.com/itaybeerli . I've translated to Hebrew from English several articles about the geometry behind paperfolding.
