I need some healthy, easy to make meal ideas.

I need some healthy, easy to make (as in low prep time), and CHEAP recipes.  I just graduated from College and don't want to get stuck in a fast food rut.  My boyfriend cooks very well, but lives in a different state, so I can't (and don't want to) rely on him to cook.

What are your favorites?   I'm not a huge chicken fan, but I know it's a great source of lean protein, so I'm willing to eat it.  I'm also not against Tofu (in fact, I really like it), and I love my fruits and veggies, but am tiring of a salad EVERY day. 

 

What are your favorite, healthy, and quick recipes?

How about a healthy eggplant sandwich? The recipe is way less complicated if you just buy some already-roasted eggplant and roasted red bell peppers in jars. Rinse them before using to get rid of excess fat and oil. Enjoy!

There is this great fish recipe I use sometimes. Grill talapia on a grill and while its cooking mix 1 choped up apple, a few sliced olives, 2 chopped up green onions, and the inside of 2 lemon all cut up into a bowl. Then when the fish is done, put all the stuff you just mixed up on top and eat it. It's great! Use green olives though.

Pasta! One meal I make reguraly because cheap and easy is:

Fettucini in a cream sauce.

Cut Bacon, Onion and Capsicum into 1cm squares. Cook until onion is clear and then add thickened cream and about 100g tomato puree to it.

if you ever have a little extra money it's always nice  to add diced chicken breast.

Just an idea!
