Last name for baby

If a single mothers is having a baby and knows who the father is, what last name should the baby have?

Whatever name she chooses.

I know a young woman who gave her child her family's last name and I know another who gave her child the father's last name.

It is entirely up to the future parents to choose, and if the mother-to-be and father-to-be do not have a good relationship, then I say it is up to the mother to make the final decision.

P.S. She could always consider hyphenating the last names.

I would like you to consider this. Even though you might never need this. If you ever wish to travel abroad with the child and he/she has a different last name than you, you have to have the fathers written permission to take the child out of your country. If the childs father is accesible that way, give the child whichever last name you want, however if he is not, this is something you should know.
