I think it is a matter of personal taste , I think you have to try a few and find out what is suitable for you. I would narrow the list down to four instruments: Piano, Guitar, Flute and voice.

All depends on what kind of a person are you, if you have good with your fingers or your breath, if you have tempo and stuff like that.

Generally speaking, I find that woodwind instruments are easier, as they do not require harmonics, only one melodic line.  That is why the recorder is the first instrument for many kids.  On the other hand, kids under the age of 10 might find it hard to produce and sustain a steady sound on a woodwind instrument, as controlling one's breathing and placing one's fingers precisely require some coordination.  So a keyboard comes in handy for younger kids, because producing a sound is easier.

Some have found that very small kids can learn the violin

Bottom line - woodwinds, except if you are 8 years old...

I find the piano easiest to learn for me. But it really depends on what kind of person you are. Also in each instrument you still have to work hard at, the more you practice the easier a instrument gets.

The autoharp is by far the easiest.  I play the violin and that family of instruments, the piano, banjo, and have experience

trying to play flute and trumpet.  You put the autoharp on your lap or a table, you push a chord button with your left hand, you strum with your right.  If you want, you can learn some fancy strums.

Probably harmonica, though bass guitar isn't too hard either. If you have no ear for music though, it may be a waste of time. If you want to learn any instrument, you have to dedicate a part of your life to learning it if you want to be good at it.
