add apple sauce and olive oil instead of veg oil, both equal parts

Make sure your oven temperature is accurate.
The oil (vegetable, olive, lard, substitute apple sauce) defines the moistness of baked items. The more oil you use...the more moist. Water based ingredients dry out, oil does not.
