Simmering is good but is there another way to make the meat even juicer
Simmering meat is by far my favorite way to cook meat, but I also love sauteing the meat as well.
It depends on the meat. If you roast then make sure that it is not overcooked. Well done meat is drier.
If you have a steak then cook it with high heat. My favorite is to cook onions, peppers and mushrooms in a little olive oil in a heavy skillet. Onions should be soft but not browned. Take them out of the skillet and turn up the heat. When it is hot put steak in pan and cook until it is done to desired doneness. I do a one inch steak about 5 to 6 minutes on each side but I am careful about overcooking since I like my steak medium rare. Lower heat under pan. Return veggies to pan and reheat then pour in a little water and scrape off bit in the bottom of the pan. This will let the meat rest which helps to keep the juices in the steak.
I serve it with either baked or mashed potatoes and frozen peas.
You can brine chickens and turkeys to make them both more tender and juicy.
