I'm in love with a girl who has a man, what do I do?

Seems like her boyfriend is probably a little arrogant and likes to be watched, but most females like to be listened to. You have trouble talking, no problem, just listen and wait for the opportunity to ask a question that will allow her to talk about herself. thats probably something she doesnt get to do much. And than be patient, and most importantly, be yourself.

Just let her know how you feel about her.  If she says, she would stay with her boyfriend, you should respect her decision.  Sometimes we don't always get what we want, just one of the realities in life.
