This method is used for food that will take longer to cook, such as roasts or whole birds. For a charcoal grill, when the coals are hot, spread them around the outside edge of the grill. Place a foil drip pan in the center of the grill. Replace the grill rack and place the food to be cooked in the center of the grill rack over the drip pan. Cover the grill and cook according to the recipe. For a gas grill, preheat the grill. Turn off one side of the grill. Place the food to be cooking in a disposable foil pan and place on the unlit side. Cover the grill.
