Why is the sauce that goes on samosas green???
I actually know some recipes to samosa sauce, not all of them are green. apparently the ingridients of the sauce you are referring to reflect light at a wavelength interval of 500 - 565 nm and at a frequency interval of 530 - 699 THz , which your mind precepts as the color green.
Here is a good recipe.
1/2 cup cider vinegar1/2 cup water3 tablespoons brown sugar1 small clove garlic, minced1 teaspoon salt
1) Place all ingredients in a small saucepan. Stir until the sugar dissolves.
2) Heat to boiling, then let simmer uncovered for about 10 minutes. it will reduce slightly.
3) Serve warm or at room temperature with hot samosas.

Because the sauce is made from Cilantro. Cilantro is green. If you want the recipe just look up 'cilantro chutney'.
