Years ago, I read about a food prepared by an ...

Years ago, I read about a food prepared by an Amazon Indian tribe that involved something like 19 preparation steps. The raw material - a root, I think - was highly poisonous. The preparation involved pounding, grinding, chewing and spitting it out, and more. If any step were omitted, the product would be deadly.

I don't remember the source of the story. I'd appreciate any leads.

Perhaps the poisonous root you recall is manioc.  I haven't found a set of  preparation steps as intricate as the one you describe -- though I wouldn't be surprised if there is one.  In any event, I have found multi-step processes for turning this root into food, such as:
