Origin of "cowboy shit"

I know it's an old saying, but it came up in a family conversation. Inquiring minds want to know. What does "I'm gonna knock the cowboy shit out of you" mean? How did it originate? Does anybody have an idea? I know it implies 'to hit someone really hard, jokingly, of course. Are there any old cowboys out there (not Dallas) LOL!!
