You can remove any yellow or wilted outer leaves, and trim the leaves if they are too big, but you do not need to remove them otherwise.

I usually do at least the outer leaf because it is a little tougher than the others, like the first layer or two on the head of lettuce you buy. It just don't seem as fresh to me as the rest.
