Italian cuisine : what is Gnocchi, Escarole, Rabe?
Gnocchi is a type of dumpling, little bite size pasta sometimes made with potatoes or other veggie. Escarole is a type of lettuce that can be eaten raw or cooked in soup such as Italian wedding soup. I'm not sure what rabe is but I think it is a type of cabbage.

Rabe is a broccoli dish usually served on Christmas Eve. It can also be a dish made with turnips also called rape. So Rape becomes Rabe in some Italian dialects. It's hard to understand for many people. The Italian language may be used throughout the country, but every region seems to have it's own dialect. So a common word in one part of Italy may be virtually unknown in another part. If I remember correctly, there were 32 major dialects. I lived there for three years in the '70s.
