what is brick cheese. Is there another name for it and can you find it in Philadelphia.  Last time I had it was in Pittsburgh.

Everything I say can be fully substantiated by my own opinion.

Brick Cheese originated in Wisconsin and got it's name not only from its' rectangular shape but because it was traditionally formed between clay bricks.

It is a variation of White Cheddar, and is mild when young, getting sharper with age.

One company that distributes it nationally is Land O'Lakes.  If you can't find it locally, you could substitute a soft Cheddar or Danish Havarti.
