Hi , does anyone have a recipe for meatloaf in a microwave? irishmom52

Try this one! I've made it once before and it was quite good.

2 lbs. lean ground beef
2 eggs, beaten
2 slices fresh white bread
1 envelope onion soup mix
2 tbsp. milk
1 tsp. minced fresh parsley
1 tsp. prepared mustard
1 (8 oz.) can tomato sauce, divided

TOPPING:

1 tbsp. brown sugar
1 tbsp. vinegar

Combine all ingredients except tomato sauce and topping ingredients. Add 1/4 cup tomato sauce to meat mixture. Make into a loaf and put into a microwave loaf pan. Cook on high 13 to 15 minutes, rotating once. Meatloaf is done when it pulls away from side of pan. Let stand for 5 minutes.
TOPPING: Mix sugar, remaining tomato sauce into a 2-cup glass measure and cook on high 1 1/2 minutes and stir. Pour half over loaf. Serve remaining sauce as gravy.
Total cooking time: 14 1/2 to 16 minutes.
