Frying meat is definitely unhealthier....I recommend you go with sauteing meat for sure.

Generally, there isn't much difference between saute and fry but saute is usually thought of as using less fat. You can skillet fry without any fat if you use a heavy, nonstick skillet. Either way, add only enough fat to prevent sticking.
