Currently, you and your dog are playing a game of "salesman"; and he is being the better salesman. He is "selling" the idea that he will not eat dry food, and you are "buying". You just have to "sell" your idea better: first, give him less options. Right now, I'm betting that after a short period, you give in and he gets his canned food plus possibly scraps and treats. You need to give him just 2 choices : (1) eat the dry food of YOUR choice, or (2) starve. Let him go for as long as he wants to without food: just be sure he has plenty of water. At some point, he is going to get tired of being hungry and his stomach hurting - at some point he will also decide that this time momma (that's you) REALLY is going to let him starve. Once he gets over this hump, he will eat the dry food: you will also be able to gradually add some treats and other foods without him reverting : if he starts to get picky again, shut him off cold turkey again. He doesn't have thumbs, he can't open his own cans of dog food, he has no choice but go by your game plan IF you are strong enough. You could compromise and get him the "soft" types of dry food.
