With my digital thermostat set at 75 degrees (F) every morning I wake up and my house is at 65 - 67 degrees. Why doesnt my furnace turn on when it is supposed too?

It sounds as if the calibration is off. You may find that simply changing your thermostat could fix the problem. If that doesn't work you will need to contact a furnace repair shop as the problem could be a problem with the furnace itself.

It may have something to do with the location of your thermostat. Is it near a heat source? Heat vent, light bulb, etc. Or........you might need a new thermostat.
