I doubt the amputation has much influence over the actual diet, except in terms of physical exercise advised and permitted (aerobic exercise is supposed to be really beneficial for diabetics).

As a rule a high fiber-low carb diet is usualy recommended, but as the person before me suggested, it is much safer to go to a doctor or a licensed dietitian and get an approved dietary plan according to the exact specifications.
