Recipe for Rissoles:
Ingredients:
500 grams mince
1 onion grated
3/4 cup fresh breadcrumbs
2 tablesoons plain flour
2 eggs
salt and pepper
1 tablespoon tomato sauce
1/2 teaspoon mixed herbs
2 cups dry breadcrumbs
Mix all of the ingredients except the dry breadcrumbs and one egg. Mould into patties. Dip them into beaten egg and then cover with dry breadcrumbs. Put them in the fridge for half an hour or until needed. Fry in oil or butter in a pan or on the barbie.

This is the best recipe for rissoles.  Soak two slices of  broken up bread in 1/3rd cup milk, for 10 minutes.  Add 1 tablespoon (30mls) extra virgin olive oil. Add 1 cup of grated Cheddar cheese, or 1 Laughing Cow processed cheese portion, to the mixture.  Place in food processor with 400-500grns (1/2 lb) minced beef, a good squeeze of garlic, or some chopped garlic, a good tablespoon of mixed Italian herbs, 1 chopped onion, if liked and blitz until the mixture is smooth.  Place a jar of good Sugo in a frying pan: ( Use a good quality Pasta Sauce, with Basil, preferably).  Add a bit of tomato paste, some stock or water and form the rissoles into small balls, using an icecream scoop to make them nice and even.  Don't make them too big; sugo will evaporate too much.  Cook over a gentle heat and serve with Parmesan cheese, if liked, freshly ground black pepper and noodles.   They are nice with 'vegies and children love them.
