It depends on the type of fish.

I particularly like orange roughy filets, they don't have that 'fishy' smell or taste and I've never found an errant bone.

I like to steam/saute them with rice or vegetables; it takes just 30 minutes or less to make a one-pot meal in the frying pan on your stovetop.

I suggest you browse through a few cookbooks or look at recipes people have posted on a community cooking web site. You can try allrecipes.com or Recipezaar.com to start with (there are lots of other sites also).

If it is a filet, I just rub a little extra virgin oil on both sides & then put it in a teflon pan & fry/steam (cover it) for a few minutes (I put mango salsa on it during the last few minutes).  Yummo!  I don't cook whole fish so I do not know if this would work on that type.

I learned this one while on fishing trips to NW Ontario.

Get a "smallish" walleye filet weighing about 1/2-lb, and clean and skin it. Take a large sheet of tin foil; add a couple of strips of bacon on the foil; place the filet over the bacon and spice it w/salt and pepper; put a couple of thin slices of sweet onion and more than a couple of thinly sliced potatoes on top of the filet. Lift the corners of the foil to create a "bowl" and add a half-shot of white wine - nice stuff if you've got it - doesn't matter what it is but no sweet stuff. Fold the top and ends to seal it, and put a couple of knife holes in the top to release the steam.

Put this on the coals of your bbq for 12-min; or for about 15-min if you are putting it on the rack of a gas grill. Watch out when you open the package - the steam is hot!

I have never been a big fish eater except canned tuna.I have seen oodles of chefs do fish but it was all different kinds. I don't think you said what kind you had in mind.I read the other answers and they sound delicious if you are a lover of fish. Good luck, and good cooking.
