I'm not sure if Iunderstand the question. If you want to delete data, just tap and hold until a menu pops up. This will give you an option to delete. If you want to wipe the device clean you should do a hard reset (refer to your user manual for how to do this), and all the data will be erased - phone numbers, appointments, extra programs you installed - the lot.
If you mean to delete the actual programs, I don't know if it is possible
