The Italian capital of chocolate is Turin. (remember it's the original capital of Savoy, who included part of Switzerland, who learnt the art of chocolate from the capital and made it famous, but the traditional factories are in Turin).
The most well-known maker is Caffarel. A small but locally considered the best artisan is Croci. If you go to Turin you have to get the local "cioccolata calda" (hot chocolate), which is a cup of yummy and thick chocolate. The proof of "goodness" is your teaspoon must stay upright by itself and not fall to the side. Close to heaven is "cioccolata con panna" (chocolate with whipped cream). Try it in the famous shops Baratti&Milano or Fiorio under the arcades downtown.

Sorry cannot help on pasta and cheese but you will find both in Emilia Romagna region around the cities of Parma and Bologna. However there is so much variety of pasta and cheese in Italy that almost every region has its own specialties to offer.
