I'd visit a nutritionist, if you could find one who specializes in diabetes, that would be best. Also try a naturopath or homeopath. There is also a type of medical practice called N.A.E.T. which is based on the theory that everything is due to some type of allergy, that may be something to look into, to see if you can find any practitioners near you. I've known people who have quit smoking, and suddenly their mouths fill up with canker sores, the only relief they had found was to suck on rolaids or tums all day. A better solution for the pain may be just a mixture of liquid Benadryl and Maalox or Mylanta, in a 1:1 preperation, swish and spit after meals, before meals if it is painful to eat. This can be soothing. If you can get your Dr. to write you a prescription, ask the doc to add viscous lidocaine, which is thick and tastes awful, but it can be numbing and helpful if it is really sore. You may have some type of pH imbalance in your saliva, or some type of infection in your mouth or the saliva is secreting something in response to the chocolate if that is the only food that bothers you. And, I agree, if you are diabetic, you should try to avoid chocolate, sorry. Maybe some research on your own, if you are up to being a guinea pig, checking to see if the more 'pure' (higher in cocoa %) chocolates bother you more or less. Or, if it is all chocolates, or just certain brands, etc. as these will help a nutritionist or an ENT or other specialist to better understand what may be going on, but, once again, this would involve ingesting lots of different chocolates, which you should avoid. It could just be your bodies way of telling you to 'stay away' from this food group. Sorry I can't be more helpful, just giving you some ideas.
