bonestructure is absolutely correct! The surface molecules of any liquid are in a somewhat unstable condition with the activity above them through mere contact. The molecules beneath are all together and 'happy' so to speak. All liquids have a boiling point, at which time the liquid turns gaseous rapidly, but evaporation below the boiling point is a constant exchange of molecules, the rate of which varies depending on physical surroundings (heat, surface [the larger the surface, the more molecules are being disturbed and heading off into the air]).
