Hello Ricky,

The question regarding the best chef knife for cooking is rather like asking which car is the best to own.  Depends, depends, depends.  What are you cooking, what space do you have to work in, what is your budget, what size are you, your hands, your strength, your preference with regard to weight, thickness, point and on and on.  I don't mean to evade the question but you can see the problem answering the question as asked.  Quick question back to you however, have you tried the santoku knive.  We, at Edgemaster Mobile Sharpening work with chefs and cooks in a lot restaurants who have found the santoku to be very handy in crowded  work spaces, light enough to prevent tiring, and works on a variety of objects to be cut.  Montana Knife Works has a very nice, though heavy 8" chef that we have sold a ton of to cooks listed above.  Feel free to contact us for more information at our web site, edgemasteroforegon.com or 503-999-3334 and ask for Jon.
