How do I know what I am buying?

I live in Florida and bought a fruit tree which read Ruby Red on the tag after five years the tree is beautiful, however the fruit is light pick and not very sweet.  Is it safe to assume the fruit is not ruby red will never be red and it will not ever be sweet.  Thinking about cutting it down and trying again.  How do I know the next time I buy a fruit tree that I will be getting ruby red grapefruit?
