According to YouTube, "there is currently no way to change the screen shot that we capture from your videos for thumbnails." However, YouTube also explains that if you edit the video to a different length, it will grab a different image. So, I suppose that you can keep editing the video slightly -- a second shorter or longer -- until you get the image you want.
