Sticking with the Spanish theme - add thinly sliced chorizo, Serrano ham, a generous pinch of pimiento dulce or a tiny pinch of pimiento fuerte (caynne will do). On the peppers front, I'd get those tiny bell peppers, roast them with a drizzle of oilive oil and slice those into the mix. 

 Cripes - I'm hungry now!
