Unskinned tomatos

Ask Curtis Stone a question here.  I appeared the tomatos were not peeled.  Won't the skins separate and curl up?  How did you prevent that since your end sauce did not appear to have skins in it?

to peel tomatoes you put them in a pan of boiling water for about 15-20 seconds and then take them out and put into an ice bath     the peels will come off very easily without taking the meat of the tomato along with it
