I heard a similar story that tells about a tradition that started in Ireland, not in Kansas.

I heard a tale about a drunk Irishman named Jack that neither the devil nor god wanted him and the only place he could rest was in a rotten turnip. The Irish lit it in memory of this villain. Anyways lots of tales going around it's a fun one though.
The pumpkin and the jack o'lantern didn't start in Kansas. Maybe the use of the jack o'lantern on Halloween started there. But I haven't found any evidence of that.
Something that might help: the holiday was "Samhain" rather than "Sambain."
