I'm currently thinking about going with my mother to Nepal. She's 60 years old, and I'm looking for an easy trek that we can do together. Any suggestions?
There are many different possibilities. The question is what her walking capability is (can she walk 5-6 hours a day for three days? more/less?) but you should be able to find something suitable. I recommend the book by Lonely Planet on trekking in Nepal. It gives a lot of info on the routes and the estimated walking time as well.
