Tofu scrambled eggs


In the “squirrels vegan kitchen” blog I have seen a breakfast containing scrambled eggs from tofu (it looks really close to the origin !), and I want to know if it’s a product you buy (“tofu eggs”) or is there a recipe you can use to make it ?

Hi Tivoli, this is Kris from Squirrel's Vegan Kitchen.  I made the the tofu scramble just using regular, firm tofu.  I drained and pressed it, between 2 cutting boards to get the water out, for about 30 minutes.  Then I sauteed and chopped onion and some garlic and then added the tofu.  I tossed in the other veggies and some spices and a little nutritional yeast and turmeric (that's where the yellow color comes from, it doesn't really add any flavor).  Aside from pressing the tofu, it took about 20 minutes to put together and made 4 servings.  If you search "tofu scramble" you will find plenty of recipes online.  Thanks for stopping by!
