Pa's girl,  I love chocolate cream pie!  It's my favorite.  But I also love pumpkin pie and cheese cakes.  This time of year I make pumpkin cheese pies.  The bottom layer is cheesecake, and the top layer is pumpkin pie. With whipped cream on top.  Delicious!

I will take an excellent apple pie with a thin, flaky crust any day of the week.  Yummy!!

I like making it, but I don't really eat that much of it.

For Thanksgiving, I'll most likely do a pumpkin pie and a chocolate pecan pie; perhaps one other kind depending on my whim of the moment or what my family requests.

The pumpkin pie is very rich, but quite good; it's got 6 eggs, heavy whipping cream, candied ginger and cognac in it so a little goes a long way!

Two unbaked 8-inch pie shells (make your own or use refrigerated pie crust)

2 cups strained, cooked pumpkin (plain canned pumpkin is fine)

1 cup brown sugar

1 cup heavy whipping cream

1 cup milk

1/4 cup cognac

6 eggs, lightly beaten

1/2 cup finely shredded candied preserved ginger

2 teaspoons ground cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon salt

Mix all the ingredients with the pumpkin until well blended. Pour into pie shell and bake in a 350 degree Fahrenheit oven for about 45 minutes, or until filling is set around the edges, but still a bit runny in the center.

Serve warm or cool, plain or with whipped cream.

Hi Pa's girl,

I love pumpkin pie and cheese cake from Costco.  I don't have time to make them.  It's easier to drive to Costco though.  Happy Holidays all !!!!Laughing
