In certain recipes you can just leave the alchol out if it is a small amount, or if the liquid is necessary, broth (for savory recipes), cranberry juice, orange juice, or water may be used, again, depending on the recipe. There are certain recipes where the alcohol is important to the recipe, such as a flambe or certain drink recipes.
