What is the history of schedule of eating times in Spain? And USA?

In Spain, until recently, all shops and businesses closed 2-4pm at lunch time for siesta (sleep).  Everyone would go home, eat together and then sleep.  They would them go back to work and dinner will not be until 9.30/10pm.  This routine is largely due to people not wanting to be out in the heat of the midday sun.

In the US, people tend to have dinner from about 6pm to about 9pm, depending on the family.

Very different.
