What do they do with Shawarma leftovers?

At the end of the day, what do they do with the "leftover" Shawarma that remains "rotating" on the Shawarma stick?  Do they throw it away? give to the poor? re-use it the next day? shred it for burgers?

My friend you have just stumbled upon one of the holy secrets of the Shawarma, you see if you come late enough to a stand, just around closing time there is a chance that you will get this delicious part. But it does not end there because it would be the last Shawarma sereved and it will be huge !

If I had own a shawarma place I could answer this easily.

 

They might give to the poor or to feed animals with it. They might mince it for further use as philo dough stuffed with meat, or they might eat it themselves.

I wonder, why is it so important??!!!
