The easiest way to notice that is by examining how he interacts with you. For that you have to initiate less to allow him to show his true intentions.

See if he calls, asks you a lot about you and pays attention, inquiers about your dating life, doesn't talk about or doesn't go out with other girls, notices how you look, smell etc., remembers trivial things you did or said, tries to arrange situations where he can be near you or get you out of the company of other men.

These are just some, but the key thing is to differenciate genuene interest from other, friendy one... 

watch his eyes when he is around you. watch his body language if he is the silent type, typically if anyone is interested in you man\woman, when they are talking with you they will lean toward you a bit, if not interested, well.....it will be obvious! if the man is attentive to your needs and wants and asks you, let him be the gentleman and get it. if he opens doors for you, lost art!, if he can't stop looking at you. you'll notice. basically, watch for the small things that are not so obvious. a real man with real interest in you will start slow, that is how we generally are when we are unsure if you are interested in us!

I would assume that if a guy uses

If he goes out of his way to do things with you and be with you. A lot of communication is accomplished through eye contact. If he has eyes only for you and doesn't look at others..if he tries to make you laugh- and listens to what you have to say..and most importantly - if he doesn't play manipulative games and genuinely acts caring then you'll know he's interested in a real way.

He calls you over the phone.

He wants to see you often.

He misses you when your away.

He wants to spend the day with you.

He enjoys your company.
