In the microwave in a small microwave safe bowl, place a tablespoon of chopped red or green sweet pepper (or both), a tablespoon of finely chopped onion and one tsp canola oil. Nuke covered for about 30 secs, or until soft.
Make a basic cream sauce and when thickened, add two sliced hard boiled eggs and the pepper and onion mix to the sauce.
Serve over toast points or "sippets".
I also like to add the following to make variations. A dash of curry powder to the sauce or, a dash of Italian seasoning... some crumbled bacon or sausage. a dash of hot sauce... but not all items at once. Serves 2.

- 2 tbsps butter
- 8 eggs
- salt & pepper to taste
- 2 tbsps all-purpose flour
- 1/4 c grated Parmesan cheese
- 1 c milk
Directions
- Step #1 Place eggs in a saucepan & cover with cold water.
- Step #2 Bring water to a boil & as soon as possible remove this from heat.
- Step #3 Cover & let eggs stand in hot water for 10 to 12 mins.
- Step #4 Remove from hot water, cool, peel & chop.
- Step #5 Melt butter in a small saucepan over med-heat/flame.
- Step #6 Whisk in flour; when thoroughly mixed, slowly add milk, stirring constantly.
- Step #7 Cook until thickened.
- Step #8 Stir in cheese.
- Step #9 Pour sauce over sliced, boiled eggs.
